Castello della Sala

A few kilometers from Orvieto, on a tufaceous promontory of the Umbrian Apennines, stands the Castello della Sala , an imposing medieval manor owned by the Marquis Antinori since 1940, located in an area highly suited to the production of white wines with indigenous varietals such as Procanico and Grechetto , and international ones such as Chardonnay, Sauvignon Blanc, Sémillon, Pinot Bianco.

The cool climate and the territorial conditions have allowed the production of excellent white wines, among which the Cervaro della Sala stands out, a wine symbol of the estate, which becomes a true interpreter of an exceptional terroir. Followed by the Conte della Vipera , a refined blend of Sauvignon and Sémillon, the Bramìto della Sala , whose first vintage dates back to 1994, the San Giovanni della Sala based on Procanico, a clone of the Umbrian Trebbiano, and still the Muffato della Sala , wine "moldy" produced from grapes affected by botrytis cinerea like the great Sauternes. The only black grape variety, Pinot Noir , which is, in a certain sense, the "alter ego" of Cervaro: together they represent the two different expressions of the complex and refined soul of the Castello della Sala.
