Description
The Andreola Company represents one of the best excellences of the Valdobbiadene Prosecco Superiore DOCG. Born in the splendid territory of the classic Prosecco area, on the steep hills of Valdobbiadene, a small area in which the vine has a secular relationship with the territory. The precious limestone soils, the result of the lifting of ancient sea beds and the cool climate, ventilated and with strong temperature variations, have for centuries proved to be perfect conditions for the cultivation of glera, which gives aromatic and aromatic intense grapes. Adreola has become an interpreter of this territory with wines that express the purest and most elegant essence of Valdobbiadene. Precisely to enhance the peculiar characteristics of the area, the Andreola Winery has been associated with CERVIM since 2010, an international institution that promotes and safeguards heroic viticulture, created on steeply sloping terrains, which require hard manual work, absolutely not mechanizable. The ancient traditions and passion have married the most modern technologies in the cellar, always with the aim of preserving and enhancing the characteristics of the raw material with minimal human intervention. This is the only way to create an excellent project, which offers wines very different from the Prosecco DOC grown in the plains with high yields and complete mechanization of the work in the vineyard.
The Valdobbiadene Prosecco Superiore Extra Dry DOCG Dirupo comes from the vineyards of Col S. Martino still cultivated according to ancient tradition with glera (90%) and a small percentage of other indigenous vines such as perera (5%) and bianchetta (5%), which contribute to make the bouquet more complex and rich.
After the manual harvest, the grapes are subjected to a soft pressing to extract only the must. The wine ferments in steel tanks at controlled temperature and always in steel autoclave the refermentation takes place according to the Martinotti method.
In the glass it has a straw yellow color, crossed by a fine and continuous perlage. The bouquet is of remarkable finesse and elegance, with delicate floral aromas and aromas of white fruit. The sip is harmonious, pleasant and dynamic, with ripe fruit well balanced by the sapid component and the freshness. The Extra Dry dosage represents the tradition of Prosecco Superiore di Valdobbiadene. Its slight sugary residue compensates for the lively acidity of the wine, giving grace and roundness.
At the table it goes very well with fish appetizers, seafood first courses, risotto with vegetables, mixed fried fish.
