Paarl WO Shiraz 2016 Linton Park

It consists of pure Shiraz (or Syrah) grapes. The harvest takes place in the early morning hours of February. The selection made on the bunches allows the best grapes to be transported to the cellar, which are de-stemmed, crushed, macerated and fermented in steel for 10-14 days. The wine is then transferred to French and American barriques where it ages for 12 months.

Purple red, at sight. Notes of raspberries, pepper and cinnamon chase each other to outline an intense and rich bouquet. In the mouth the thickness of the body balances the freshness; it is enclosed in a soft sip in which the spice dominates and some slight herbaceous hints emerge.

To combine with a fillet with green pepper.
