Cannonau di Sardegna DOC 2019 Olianas

The Cannonau di Sardegna from the Olianas winery comes from the vineyards of Sedda Sa Figu and Anfiteatro, the former characterized by sandy-sandy soils that give the wine elegance and freshness, the latter characterized by clayey soils and by a windy and sunny climate that gives complexity and structure.

It mainly consists of Cannonau grapes, the red grape variety prince of the Sardinia region, with small additions of the autochthonous Tintillu. After a soft pressing of the grapes, a small part of the must obtained is transferred for fermentation in underground amphorae where the maceration on the skins continues for 20-25 days. The remaining quantity of the must ferments in steel tanks at controlled temperatures. The wine is then placed partly in second and third passage French oak barrels, partly in steel for 6-8 months.

Ruby red nectar. Strong notes of berries blend on the nose with hints of dark chocolate and tobacco. On the palate there are soft tannins and a good concentration well balanced by a pleasant freshness.

Ideal to accompany earth and vegetable appetizers, it is perfect in combination with first courses.
