Brunello di Montalcino Riserva DOCG 2012 Fattoria dei Barbi

A symbol of the Ilcinese territory, this Brunello Riserva is a deeper and more complex expression of the Brunello Annata, without sacrificing the character and elegance typical of the Fattoria dei Barbi. It is produced exclusively in vintages considered excellent, in which the best conditions for the ripening of the grapes exist.

The clusters are carefully selected, then cooled to a temperature of 16 ° C in order to favor a greater extraction of anthocyanins and polyphenols. Fermentation takes place at a temperature of 27-28 ° C for 16-17 days. At the end of the malolactic fermentation, the wine ages for 5 years, of which at least 3 in cask, followed by an aging of 6 months in the bottle.

Intense ruby red color. The nose reveals a bouquet with complex and evolved aromas of ripe plum, black currant, combined with notes of dried fruit, vanilla, mace and white pepper. On the palate it has a good body and a good balance between power, soft tannins and elegance.

Wine for special occasions, it goes well with mixed roasts, braised meats, game dishes and very aged cheeses.
